Zuvii Pancake and Waffle Mix

This morning, we made banana pancakes with Zuvii Pancake and Waffle Mix.  The mix contains organic white rice flour, Zuvii organic banana flour, organic potato starch, organic cane sugar, baking powder (potato starch, cream of tartar, sodium bicarbonate), sea salt, baking soda, xanthan gum, and organic cinnamon.  It is packaged in a facility that processes soy, tree nuts, and dairy.


We made a double recipe, whisking together 2 cups of Zuvii mix, 2 1/2 cups of lowfat milk, 2 large eggs, and 1/4 cup of grapeseed oil.  We had a lot of pancakes left over, but froze them for future meals.


We cooked the pancakes in nonstick pans greased with butter over medium low heat.  After we put the batter in, we added pieces of banana for my husband and I, and banana and Enjoy Life mini chocolate chips for my daughters.


I like to eat banana pancakes with a lot of butter on top, my girls ate them plain, and my husband added some butter and syrup.


My husband and I loved the banana pancakes we made this morning, and I would definitely buy the mix again.  I thought Zuvii Pancake and Waffle Mix rivals our favorite gluten free pancake mix, Trader Joe's Gluten Free Pumpkin Pancake Mix.
