Honey & Spice Pumpkin Seeds

I was never a huge fan of pumpkin seeds until I started making a Williams-Sonoma recipe for Toasted Pumpkin Seeds with Honey & Spice.  Over the years, I have made some changes to the recipe, which was included in my Williams-Sonoma Pumpkin Carving Kit.  


We always have plenty of pumpkin seeds, because we usually carve 3 to 4 large pumpkins.

Pumpkin Cupcakes Recipe and Sweet & Simple Gluten-Free Baking Giveaway

Chrystal Carver, author of Sweet & Simple Gluten-Free Baking: Irresistible classics in 10 ingredients or less?, sent me her new cookbook, and she will be sending the lucky winner of my giveaway a signed copy as well.  Update - the giveaway is now over.


I made the chocolate shortbread tarts, seen on the cover of the book, shortly after it arrived.  My girls loved them, and I will be using the chocolate ganache portion of the recipe as my go-to ganache recipe from now on.  It was so easy to make, and would be great with cupcakes or fresh fruit.

Gluten Free Pumpkin Waffles

Cup4Cup Pancake & Waffle Mix is one of our favorite gluten free products.  The pancakes we have made with it are the best gluten free pancakes we have had, and it makes terrific waffles too.  You can read my review of Cup4Cup Pancake & Waffle Mix here.  



Since Labor Day, I have been completely focused on fall recipes, so I decided I needed to figure out how to make pumpkin waffles, because I hadn't had them since my celiac diagnosis six years ago.  I added some pumpkin pie spice, and substituted organic pumpkin puree for the egg called for in the waffle recipe on the bag.

Last fall, my friend Shelley told me about a recipe for Spiced Pumpkin Scones that she had made with Cup4Cup Multipurpose Flour. Throughout the year, I make plain scones about once a month, but as soon as Labor Day rolls around, I am ready for everything pumpkin.

Cream Cheese Pumpkin Pie

For at least 30 years of my life, I did not eat pumpkin pie.  I didn't understand what people liked about it.  On Thanksgiving, my family made several desserts, so I would just eat apple pie, and bypass the pumpkin.  Then my aunt came home from Williams-Sonoma with a recipe for Creamy Pumpkin Pie.  She made it, I tried it, and it was love at first bite.



Who knew that adding cream cheese to pumpkin pie could make it so delicious!  I love that it is light and creamy, not heavy like a cheesecake.
