Deanna's Gluten Free

Restaurants at Disney World use several brands of gluten free dinner rolls, hamburger buns and bread, including Deanna's Gluten Free, Local Oven, Ener-G, and Udi's.  When heated well, Deanna's Gluten Free dinner rolls and hamburger buns are my favorite, because they have the best taste and texture.  Deanna's Gluten Free used to be called Gluten Not Included, so Disney chefs used to refer to her products as GNI.


Last week, I ordered dinner rolls and flatbread from Deanna's Gluten Free.  The allergen free dinner rolls contain brown rice flour, tapioca flour, flax meal, evaporated cane juice, yeast, palm oil, filtered water, sea salt, xanthan gum, and natural enzymes.  They are non-GMO, gluten free, dairy free, egg free, soy free, nut free, and corn free.


The flatbread contains brown rice flour, tapioca flour, yeast, evaporated cane juice, filtered water, palm oil, xanthan gum, and sea salt.  It is non-GMO, gluten free, dairy free, egg free, soy free, nut free, fish free, and corn free.



I prefer to eat bread with butter, and I love when Disney restaurants have honey butter, which is great on Deanna's allergen free dinner rolls, which are a little bit sweet themselves.



Mama Melrose's in Disney's Hollywood Studios is one of my favorite restaurants for Deanna's rolls at Disney World, because they always seem to heat them perfectly, and they are served with an incredible mix of olive oil and dry herbs that has a nice spicy kick from all the pepper in it.



My rolls did not come with any instructions for heating them, so I asked my friend Chef Tony from Disney's Port Orleans Resort - French Quarter for help.  He recommended putting them in a 350 degree oven for 3 to 5 minutes, but I have found that I need to heat them a minute or two more than that.  Another option is to open the bag a little, and microwave them for 10 to 15 seconds on high.  When they are heated well, they are so good.  When I put my rolls in the freezer, I always defrost them before cooking them.



I decided to buy a package of Deanna's flatbread, because of the amazing garlic pesto chicken flatbread with fresh mozzarella, balsamic onions, red peppers and arugula I had at Season's 52 in Orlando earlier this year.  I did find baking instructions for Deanna's flatbread on her website - preheat oven to 500 degrees, add sauce and toppings, then bake for 4 to 6 minutes on a perforated pizza pan, pizza stone, or baking sheet.

I put my dinner rolls and flatbread in the freezer when they arrived, but they can be kept at room temperature for up to 7 days, or refrigerated for up to 21 days.

December 15, 2016 Update



For dinner tonight, I made a garlic four cheese flatbread with Deanna's allergen free flatbread.  When I opened the package, I found directions for cooking it on the back of the label.  I preheated my oven to 500 degrees, lined a baking sheet with parchment paper, and defrosted the flatbread in my microwave for 3 minutes, before adding toppings.  I brushed the flatbread with a mix of olive oil and minced garlic, sprinkled it with a little bit of sea salt, coarse ground black pepper, and dried basil and oregano, before adding a four cheese blend of Parmesan, Romano, Asiago and provolone.  The directions said to bake it for 4 to 6 minutes.  I cooked both of the batches I made for about 5 1/2 minutes, and they turned out perfect.  My gluten-eating husband and daughters were all really impressed, and I loved it too, so I will definitely be buying this product in the future.
