Namaste Waffle & Pancake Mix

In January, we took a cruise on the Disney Fantasy, where I had gluten free Mickey waffles for the first time on any of my seven cruises on the Disney Cruise Line.  They tasted so good, I asked the chef how he made them.  Chef Sinclair told me that he uses Namaste Waffle & Pancake Mix, and adds a little honey, which is why they tasted slightly sweet.  Namaste is one of the waffle mixes used at Walt Disney World restaurants to make Disney-themed waffles.


When we got home, I had no luck finding the mix at any of my local grocery stores, so I ordered it from Vitacost.com.


Namaste Waffle & Pancake Mix is non-GMO, kosher, certified gluten free, and is free from the top 8 allergens.  


It contains sweet brown rice flour, tapioca starch, arrowroot powder, rice syrup solids, cream of tartar, baking soda, salt, and vanilla.


Each box contains enough dry mix for two batches of waffles.  I used 2 large eggs, 2 tablespoons of Spectrum organic canola oil, 3/4 cup of lowfat milk, 2 cups of dry mix, and one tablespoon of honey.  I had enough batter to make 12 small Mickey waffles, which was plenty for my family of four.  My Disney 4 Mickey Waffle Stick Maker is from Amazon.com.


I cooked each batch of waffles for about 3 1/2 to 4 minutes.  They crisped up pretty well, and I was happy with the taste and texture, but next time, I will add a little more honey, because they were not as sweet as the waffles I had on the Disney Fantasy.  You could also sweeten them with sugar or applesauce, two suggestions on Vitacost.  I love to make pumpkin waffles with Cup4Cup Pancake & Waffle Mix in the fall, which I am sure you could do with this mix too.  Pumpkin puree would replace one or both eggs (1/4 cup per egg), and I would add 1 1/2 teaspoons of pumpkin pie spice.


I thought Namaste Waffle & Pancake Mix made waffles that were just as good as the Cup4Cup Pancake & Waffle Mix I usually use at home, and the mix is less expensive, especially considering that each box contains enough mix for two batches of waffles.
