Mickey Waffles with Cup4Cup

My daughter Emma and I headed down to Sassagoula Floatworks and Food Factory at Disney's Port Orleans French Quarter this morning to try the Mickey waffles made with Cup4Cup Pancake & Waffle Mix.  This mix was recently adopted by Disney, and has replaced the allergy friendly waffles made with Bob's Red Mill at Port Orleans.  I enjoyed my adorable little Mickey waffles with some butter and syrup.  Just looking at them puts a smile on my face!  Emma and I only ordered a kids portions because we couldn't miss the opportunity to eat gluten free beignets while we were at Sassagoula.  


Cup4Cup is produced in a dedicated gluten free facility that is also soy free and nut free.  It is not dairy free because it contains milk powder, but a dairy free version of Cup4Cup all-purpose flour is on the horizon.  


The pancake & waffle mix contains cornstarch, white rice flour, sugar, brown rice flour, milk powder, tapioca flour, baking powder, potato starch, salt, and xanthan gum.  The only allergen warning is that the mix contains milk products.  


For each pouch of Cup4Cup Pancake & Waffle Mix, the directions say to add 3/4 cup of milk, 1 whole egg, 6 tablespoons of melted butter, and 1/2 teaspoon of vanilla extract (optional).  

Chef Tony told me that they follow the directions on the bag for waffles, with the exception of using canola oil instead of butter.  

My husband and I purchased Cup4Cup Pancake & Waffle Mix from Williams-Sonoma a couple of months ago, and made waffles with it.  They were easy to make, and the whole family really enjoyed them.  You can read my review here.  


If you are dairy free, quick service locations at Port Orleans will still have Namaste Waffle & Pancake Mix available to make Mickey waffles.  It is free of gluten, soy, corn, potato, dairy, casein, peanuts & tree nuts, and GMOs.  The mix is made with Ener-G egg replacer, so it is egg free as well.  The Namaste Mickey waffles will be made in a separate waffle iron to avoid cross contamination.  


I enjoyed my Mickey waffles, but I was very distracted by the amazing gluten free beignets they make at Sassagoula!  The beignets are gluten free, dairy free, egg free, and soy free.  You can view the recipe here.

June 20, 2017 Update

Sassagoula at Port Orleans Resort - French Quarter is no longer using Cup4Cup to make their Mickey waffles.  They have switched to the Carbon brand, which I have tried at Disney's Hilton Head Island Resort.

  1. Did the chef say anything about whether or not the Namaste and Cup4Cup mixes will be made on the same waffle maker or not?
