Nomad Lounge Honey-Glazed Coriander-Spiced Pork Ribs

Nomad Lounge has become our favorite restaurant at Disney's Animal Kingdom.  Even before they added their amazing gluten free churros to their menu, we loved to stop in for small plates and drinks.



The honey-glazed coriander-spiced pork ribs at Nomad Lounge are some of the best ribs I have ever had, so over Thanksgiving Break, I asked our server if the chefs could share the recipe with me.  She told me that they did not have a printed recipe, but she makes them at home all the time, so I quickly wrote down the ingredients she listed, and directions for cooking the ribs.




We made Nomad Lounge's honey-glazed coriander-spiced ribs a few weeks ago, and my entire family agreed that they are the best ribs we have ever made at home.


Nomad Lounge Honey-Glazed Coriander-Spiced Pork Ribs 

Ingredients

2 racks baby back ribs - cut in half
Sea salt - to taste
Coarse ground black pepper - to taste
Ground coriander - to taste
Paprika - to taste
Granulated garlic or garlic powder - to taste
Glaze
5 T raw honey
Juice of 3 limes
1 tsp ground coriander

Directions

Preheat oven to 250 degrees.

Remove the silverskin from the ribs, and sprinkle both sides with a generous amount of salt, pepper, coriander, paprika, and granulated garlic.  Wrap each half rack of ribs in aluminum foil, and place them side by side on a baking sheet.

After baking the ribs for 3 1/2 hours, remove them from the oven, and finish cooking them on a grill, basting them with the glaze of honey, lime juice, and coriander.

Recipe Notes 

Our server at Nomad Lounge told me that she cooks her ribs for 6 hours in the oven before grilling them, but we were short on time and only baked ours for 3 1/2 hours.  They tasted great, so we will continue to cook them for that length of time in the future.

Our limes were super dry, so I was not able to use a lot of lime juice.  Definitely sample your marinade before using it, and adjust ingredients to suit your taste.  You might want to make some extra marinade, because it was pretty amazing, and we all wished we had a little more.
