Inspired by Happiness Three Layer Cakes

Last night, we had our final international student dinner of the school year at P.F. Chang's.  After feasting on a variety of gluten free dishes, my friend Arlene brought out the gluten free cake she bought at Publix for the celiacs in our group.  

The Publix in the Hollieanna Shopping Center in Winter Park, and the Publix in Baldwin Park are now carrying two varieties of gluten free cakes from Inspired by Happiness.  I was amazed at how good the Dreamin' of Chocolate Dark & White Chocolate Layer Cake was.  It is chocolate cake with layers of Belgian white chocolate mousse topped with chocolate ganache.  If you read my blog regularly, you might have noticed I frequently find gluten free cakes and cupcakes to be too dry, and their frosting to be too sweet, but this cake was moist and not overly sweet.  Arlene and her husband sampled both the gluten free and the gluten-filled cake, and liked the Dreamin' of Chocolate cake better.  

Both stores had the Dream' of Chocolate and the Dreamin' of Strawberries layer cakes in their bakery in the refrigerated case, displayed with the gluten-filled cakes that are made in-house.  

I just tried the Dreamin' of Strawberries White Chocolate Shortcake.  It is described as shortcake layered with strawberry fruit filling, topped with whipped cream and white chocolate drizzle.  I liked it, but I much prefer the Dreamin' of Chocolate Cake, because it is not as sweet, and I am a bit of a chocolate addict.  My husband and daughters liked both as well, but gave a slight edge to the strawberry cake.  Both cakes are certified gluten free by the National Foundation for Celiac Awareness.

Update - Locally, blog readers have told me that they have purchased the cakes at the Publix on Alafaya at The Shoppes at Eastwood, and the Publix on Chickasaw.  They have also been seen at Target stores in Clermont and Winter Garden.

Allergen Information - The cakes contain dairy, soy, eggs and corn, and have a warning that they may contain peanuts, coconut, almonds, hazelnuts, pecans and walnuts.
