Palo-inspired Herb Bread and Garlic Chicken Flatbread with Udi's Gluten Free Pizza Crust

On Friday night, my husband and I had dinner at Palo on the Disney Fantasy.  For bread, I was served slices of Udi's gluten free pizza crust with herbs on it.  It looked almost exactly like my husband's gluten-filled bread.


I liked it so much, I bought some Udi's pizza crust at Whole Foods today to make bread to go with the pasta dish I made for dinner.


I defrosted the pizza crusts for two minutes in the microwave before brushing the tops with extra virgin olive oil.  I then added minced garlic, finely chopped fresh basil and oregano, a shaved three cheese blend of Parmesan, Asiago & Romano, and a little sprinkle of kosher salt.


I preheated my oven to 375 degrees, then baked the pizza crusts for 7 minutes, directly on an oven rack in the center of the oven.  I cut them with my kitchen shears when they were done cooking, and served them right away.  The bread I had at Palo did not have cheese, but I decided to add a small amount tonight, because I love garlic bread with cheese.  My gluten-eating daughters, husband, and father-in-law all loved it.


Usually when I am craving bread, I make a ciabatta-like bread with Luce's OMG Flatbread Mix.  It is easy to make, and incredibly delicious, but I really liked the Udi's flatbread I made tonight too, and I assembled it and cooked it in less than 15 minutes.  Pops, my father-in-law, told me that he wanted both my bread and pasta recipes, so I decided to post the instructions for making my Palo-inspired herb bread on my blog.  You can view my spaghetti with Romano & black pepper recipe here.

February 3, 2016 Update - Garlic Chicken Flatbread



For dinner tonight, I made a garlic chicken flatbread using my Palo-inspired herb bread recipe and a few extra ingredients - chopped chicken breast (cooked), a little more three cheese blend, and a sprinkle of grated Romano.  It was so delicious!
