Bella Lucia Gluten Free Pizzelle

Earlier today, my latest order from Vitacost.com arrived, with two packages of Bella Lucia gluten free vanilla pizzelle.  I stumbled across them when searching for some gluten free cookies my daughter Emma wanted me to buy for her.  We have actually tried Bella Lucia gluten free pizzelle before, but I have always had to order them from their website.


Both my husband and I grew up eating the pizzelle our Italian grandmothers made.  As a kid, I loved making ice cream sandwiches with these Italian waffle cookies.


Bella Lucia gluten free vanilla pizzelle are just as good, if not better, than the pizzelle my grandmother used to make.  I love that they are a little bit thicker than the ones she made, so they hold up better for making ice cream sandwiches.  I prefer vanilla, but Bella Lucia also makes anise, chocolate brownie, lemon, Saigon cinnamon, and chocolate drizzled vanilla pizzelle.  I have tried the Saigon cinnamon, and they are very good.   All varieties of Bella Lucia pizzelle are gluten free and non-GMO.


Tonight, I served my pizzelle with cannoli filling (recipe below) on top of them.  I love cannoli, but have no interest in making traditional cannoli shells, so I like to eat cannoli filling on top of homemade or Bella Lucia pizzelle.  I even have a cannoli dowel that was included with my pizzelle iron, that we roll the warm pizzelle around to make them into cannoli shells.

Cannoli Filling

15 oz whole milk ricotta cheese
1/2 C (71 g) powdered sugar
1/4 C (59 g) heavy whipping cream
1/2 tsp Vietnamese cinnamon
1/2 tsp freshly grated orange zest
1/2 tsp pure vanilla extract
2 T semisweet mini chocolate chips

Directions

In a large bowl, mix together the ricotta, powdered sugar, heavy cream, cinnamon, orange zest, and vanilla extract.  Stir in the chocolate chips.  Store in the refrigerator until ready to serve.
