Williams-Sonoma Gluten Free Flappin' Jack Pancake Mix

PC (pre-celiac), my husband and I used to buy Williams-Sonoma Flappin' Jack Pancake Mix all the time, so I was super excited when I saw a gluten free version of my favorite pancake mix at my local Williams-Sonoma store.   


Each container of gluten free Flappin' Jack includes two packets of pancake mix.  To make the pancakes, you add 3 tablespoons of unsalted butter, 1 egg, and 1 1/4 cups of milk to the mix, which contains Cup 4 Cup flour.  


The batter of the gluten free version is much thicker than the gluten-filled Flappin' Jack we used to buy.  


The directions say to cook the pancakes over medium heat, but we have had much more success with these pancakes cooking them slowly over low heat, in a frying pan with butter.  


Placing a lid on the pan while they cook helps them to cook on the inside before they burn on the outside.  


One packet of mix makes plenty of pancakes for our family of four, with a couple left over.  I freeze the leftovers in sandwich bags, and they are very good defrosted and reheated in the microwave during the work/school week.  


My husband is the only one that eats pancakes with syrup.  My daughters and I like to eat ours with fresh fruit, like berries, peaches, banana, or mango.   


Flappin' Jack Gluten Free Pancake Mix is pricey at $19.95 per container, but it's worth it.  They are definitely our favorite gluten free pancakes.  We love how light and fluffy they are, and the texture is just like a gluteny pancake.
