Chicken & Peas Stuffed Sweet Potatoes

When I picked up my daughters from school, I had no idea what I was going to cook for dinner.  With my husband not coming home tonight, I knew I wanted to make something easy that didn't involve much clean-up.  


Kirkland Signature Seasoned Rotisserie Chicken from Costco has no added hormones or steroids, and no preservatives, msg, gluten, or artificial flavors or colors.  It's large, juicy and flavorful, and only costs $4.99.  


While we were shopping at Costco, my daughters asked me to make chicken, bacon & cheese stuffed potatoes.  Because we didn't want to make another stop to buy organic russet potatoes, we decided to make our stuffed potatoes with the Hannah Yams (sweet potatoes) I had at home.  Not being a fan of orange sweet potatoes, unless they are in my Sweet Potato Pineapple Casserole, I purchase Japanese sweet potatoes or Hannah Yams from Whole Foods.  I recently found organic white sweet potatoes at Publix as well.  


It's amazing how something so simple can be so delicious.  As I took my last bite of my stuffed potato, I was pretty sad that I didn't have anymore.  I was really excited though, that my daughters liked this dinner as much as I did.

Chicken & Peas Stuffed Sweet Potatoes

Ingredients

4 large Hannah yams/white sweet potatoes/Japanese sweet potatoes
Rotisserie chicken - cut into cubes
1 stick (8 tablespoons) salted butter
10 oz frozen peas - prepared according to package directions
Kosher salt - to taste
Optional - grated cheddar cheese

Directions

Preheat oven to 450 degrees.  Wash and scrub the potatoes well.  Dry them off, then poke each one with a fork or sharp knife about 8 times.  Place them directly on a rack in the middle of the oven.  Place a large piece of aluminum foil on a shelf beneath them to catch any drippings.  Bake for about one hour, until the potatoes are easy to pierce with a sharp knife.

Cut each potato in half lengthwise, then add 1/2 to 1 tablespoon of butter to each side, mashing the potato with a fork until the butter is melted and well combined.  Add the chicken and peas before serving.  Optional - garnish with cheddar cheese.

Recipe Notes

I used one package  of Publix GreenWise Organic Sweet Peas from the freezer section, and cooked them according to package directions before adding 1 tablespoon of butter and a large pinch of kosher salt.

My daughters added some Organic Valley Finely Shredded Mild Cheddar Cheese to their potatoes.

Make sure your rotisserie chicken is gluten free.  You could also cook two or three large chicken breasts, then cut them into bite size pieces.

I started buying organic potatoes after reading that the huge majority of conventionally grown potatoes, even after being washed and peeled, contain pesticides.  You can read more about it here and here.
